- In a bowl or jar, combine the chia seeds, almond milk, vanilla extract, and sweetener.
- Stir well to mix and prevent clumping.
- Let the mixture sit for 5–10 minutes, then stir again.
- Cover and refrigerate for at least 4 hours or overnight until it thickens to a pudding consistency.
- Before serving, stir again. Top with fresh berries and a mint leaf if desired.
