Chia Seed Pudding

Ingredients
  

  • 3 tbsp chia seeds
  • 1 cup unsweetened almond milk or any preferred milk
  • ½ tsp vanilla extract
  • 1 tsp natural sweetener e.g., stevia or monk fruit
  • Fresh berries strawberries, blueberries, raspberries, blackberries
  • Fresh mint leaves for garnish optional

Method
 

  1. In a bowl or jar, combine the chia seeds, almond milk, vanilla extract, and sweetener.
  2. Stir well to mix and prevent clumping.
  3. Let the mixture sit for 5–10 minutes, then stir again.
  4. Cover and refrigerate for at least 4 hours or overnight until it thickens to a pudding consistency.
  5. Before serving, stir again. Top with fresh berries and a mint leaf if desired.
