  • 2 cups Vegetable broth for boiling

  • 1 cup Cherry tomatoes halved
  • 2 cups Spinach fresh
  • 1 can Chickpeas drained and rinsed

  • 2 tablespoons Olive oil for sautéing
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon juice freshly squeezed

Method
 

Steps to Make
  1. Rinse quinoa under cold water, removing any bitter coating.
  2. Boil vegetable broth in a pot over medium-high heat.
  3. Simmer the rinsed quinoa in the boiling broth for about 15 minutes.
  4. Sauté garlic in a pan with olive oil over medium heat until fragrant.
  5. Add cherry tomatoes and spinach, cooking until the spinach is wilted.
  6. Mix in the drained chickpeas and cooked quinoa.
  7. Drizzle with fresh lemon juice and season with salt and pepper.
